Aged Thai anchovies are fermented into a sublimate sauce elevated by a bit of heat with the addition of a couple of fiery Thai chilli peppers. Known locally as nam pla, this anchovy sauce is a ritual in every Thai kitchen and will punch up any meal. Whip it up, warm it up, or try it straight from the bottle.
